Pineapple Asian Chicken
2-3 lbs chicken breasts
½ teaspoon fresh grated ginger
1 tablespoon garlic, minced
1/3 cup pineapple juice
1/3 cup brown sugar
2 tablespoons tomato paste, (or ketchup)
1 tablespoon apple cider vinegar
1/2 C water
1/3 C soy sauce
pinch red pepper flakes
Cut the chicken into bite size pieces. In a flat dish with sides combine ¼ cup cornstarch and 1 cup flour with 2 pinches of chile powder (to taste). Stir to combine.
Heat the skillet and oil, about 4-5 tablespoons over medium high heat. Add the chicken pieces to the pan and let them cook, about 10-11 minutes, stirring and turning occasionally.
Let this simmer for about 7-8 minutes. Add the chicken back to the skillet and stir it around to cover all the chicken pieces. Re-cover and simmer for another 8-10 minutes, stirring a couple of times, until the mixture becomes thick and gooey. Serve over white, brown or fried rice.
